Pronounced “BOO dan,” this is a type of sausage that comes from Cajun country, which is the middle of the state of Louisiana. Boudin uniquely includes rice. The pork, rice, onions, green peppers, and seasonings are lightly blended and then stuffed in a sausage casing. When you eat it as part of a meal in a restaurant, it may be served in the casing or without it, and are sometimes balled up, breaded, and deep fried as Boudin Balls. Everyone has a slightly different recipe, (some include crawfish!) but I’ve never met a boudin I didn’t like!
