No not "crawdads" or "crayfish". Crawfish! Sometimes we call them Red Hots or Mud Bugs. Whatever you call ‘em, they're delicious! The good news for 2015 is that the season began much earlier than expected…it's actually in season now! The Cajuns (from the middle of the state) brought the art of cooking crawfish to New Orleans, and we're so thankful for it. Technique is everything when peeling and eating crawfish. It's too complicated to put in the Mardi Morsel, but just remember to pinch the tails then suck the head. For more specific instruction ask the local sitting next to you.
